Mother’s Day is the busiest restaurant day of the year in the United States, which is why it is the one where everybody waits. Have the chef come to the house instead — and make sure the person being celebrated does not touch a dish.

The point is that she does not work

The failure mode of Mother’s Day at home is obvious: the meal happens in her kitchen, so she ends up hosting her own celebration. A private hibachi chef removes every part of that. We bring the grill, the propane, the food and the service, we cook in front of everybody, and we clean our own station before we go. She sits down, watches the show with the rest of the table, and there is no pile of pans afterwards. That is the whole reason this date is one of our three busiest of the year.

Restaurants on this day, honestly

Mother’s Day runs more covers than any other day on the American restaurant calendar. Practically that means a fixed brunch menu, a 45 to 90 minute wait even with a reservation, a room too loud for a grandmother to hear across the table, and a hard stop when the next seating arrives. A hibachi chef at the house has no seating limit, no wait and no noise you did not choose — and multi-generational tables, which is most Mother’s Day tables, work far better without a room turning around them.

Brunch, lunch or dinner

We cook lunch and dinner rather than brunch — there are no pancakes on a hibachi grill. In practice most Mother’s Day bookings sit at 1pm or 5pm. Adults are $55 with two proteins each from steak, chicken, shrimp, salmon and tofu, filet mignon and scallops as premium upgrades, lobster tail at market price. Children are $30. Every plate comes with hibachi fried rice, seasoned vegetables, salad and the house sauces.

This is a book-in-April date

Along with December 31 and Christmas Eve, the second Sunday in May is a date we run out of chefs on. Bookings open early and the good afternoon slots are gone by late April. If you are organising siblings and cannot pin the headcount yet, book the date with a rough count — the count can be changed later, the chef cannot be un-booked. Hibachi at home is the version where nobody drives, nobody waits for a table and nobody watches a clock. A backyard hibachi setup needs a level area roughly 10 by 10 feet with open air above the grill. This is mobile hibachi catering: the grill, the propane and the food all come on the truck. An in-home hibachi setup under a proper range hood is the fallback whenever the weather is against you. A hibachi party is a meal and a performance inside the same 90 minutes. Questions we get asked

Do you cater Mother’s Day brunch?
We cook hibachi, so lunch and dinner rather than brunch. A 1pm sitting is the closest thing to a brunch slot and it is popular — it feeds everyone in the early afternoon and leaves the rest of the day open.
How early do I need to book Mother’s Day?
Four to six weeks. It is one of the three dates we genuinely sell out — the others are New Year’s Eve and Christmas Eve. Afternoon slots go first.
Can you cook for a table with grandparents and toddlers?
That is most of our Mother’s Day tables. Children are $30 each with a plain plate available — chicken and hibachi fried rice, no spice, sauces on the side — and the chef will cook any plate mild on request. The show can be turned down if noise is a problem.
Can the chef cook indoors if the weather is bad in May?
Yes — under a range hood, in an open garage, or on a covered porch. Agree the fallback with us when you book so nothing has to be decided on the morning.
