There is an obvious joke in booking a chef who does an onion volcano and a flaming stack on the one day the whole country is already looking at things that light up, and it works exactly as well as it sounds. The chef sets up on the driveway, deck or patio, cooks the group in courses through the late afternoon, and is packed and gone in time for everyone to walk down to the fireworks. Shore rentals and the July 4 week

Because the chef cooks in courses rather than putting out a spread, food arrives hot for as long as the party lasts β which is the difference between hibachi and a tray of anything at 4pm in July.
